Our grandaughter, Ketterra, is 5 years old and a culinary creator.  This is her recipe for a Raspberry cake that goes well with vanilla ice cream and a topping of mashed raspberries

 

1 pint mashed fresh raspberries

3/4 cup sugar

3/4 cup flour

1 egg

1 tsp baking soda

3 T light olive oil (or any vegetable oil)

Mix together well and pour into a greased baking dish (we use a pie pan)

Bake for 30 minutes at 350 degrees (time may vary depending on dish used).
